Ingredients

  • 2 servessoy protein crisps
  • 1 serveMuscle Nation Vanilla Milkshake protein powder
  • 100gfrozen blueberries
  • 1 serveNoshu sugar-free white chocolate
  • ½ tspcoconut oil
  • Not specifiedmonk fruit sweetener, optional

Method

  1. Add the soy protein crisps and vanilla protein powder to a bowl. Gradually add a little water, mixing as you go, until the crisps are evenly coated and the mixture is thick enough to hold together.
  2. Divide the mixture evenly between five individual silicone moulds and press it down firmly.
  3. Microwave the frozen blueberries for about 1 minute 15 seconds, or warm them gently on the stovetop, until softened and juicy. Spoon the blueberries evenly over the five portions.
  4. Melt the sugar-free white chocolate in the microwave in 30-second intervals, stirring between each interval until smooth. Stir in the coconut oil to create a thinner drizzling consistency.
  5. Drizzle the melted white chocolate over each blueberry bite. Sprinkle with monk fruit sweetener, if using.
  6. Freeze until firm. Before eating, leave a bite at room temperature for 1–2 minutes so it softens slightly.
